What do you guys do for ASP support? Is what ServerBeach has installed by default working well enough? Is this even possible on a Linux server?

I don't believe the vanilla preinstalled systems have any support for ASP, but you can add in ASP support by using Apache::ASP (http://www.apache-asp.org/) for both Apache 1.3.x and 2.x

Also, I know in Plesk it has an option to enable Apache support, but we didn't think we had it so we never checked it for a domain. If we installed it, could we set it up to work for every domain?
