Hello everybody:

I am a new happy "beach boy" since few days ago. I got my server in about 3 hours with a minimal debian instalation, as expected.

As usual with Debian, the official stable version becomes obsolete. Is it recommended to upgrade to sargent? Anybody has do it already? Any hint?

It's not obsolete...it's stable. They simply do not introduce new software versions. Stable is recommended for production systems, so you don't have to worry about the latest packages breaking something that works. "If it ain't broke, don't fix it."

It's only recommended if you're highly familiar with Debian and are able to fix any potential problems that may arise.

The testing and unstable branches may have packages that have seen very little testing time and could have new features that are incompatible.
