Correct me if I am wrong, but if I enable spamassin, all it does it detect spam, and write *****SPAM***** in the subject line, then allow the e-mail to pass to my pop3 mailbox anyway correct? So generally I can setup a filter to detect the re-written subject and everything is just peachy key. right?

Right - rewriting the subject is an option you can enable... but that's exactly what I do - that way no email gets stopped, just routed to a nice folder in my outlook box that I can check periodically for problems. :)
Spamassin == SpamAssassin ;)
